Yamamoto Kenji began his apprenticeship in 1985 under the last toji to study in Nada before the great warehouse fires. He does not use digital thermometers. He does not need to.

Each morning at 4am, he walks the koji room by feel — humidity sensed through the back of his wrist, temperature through the soles of his feet. The rice tells him what it needs. He has been fluent in its language for four decades.
